Bay Leaves have a strong fragrance, but a more subtle flavor.  Raw, they are pungent and bitter, but cooked, they are lightly floral and aromatic.

USES:

Use in soups, stews, seafoods, puddings and custards. Use ground bay leaves in place of whole to avoid picking them out of your soup later.  For a slightly different flavor, ground bay leaves can be substituted for thyme.
